Hand-made apple jam

Our first task for the first Food Technology lab session was to make apple jams. There are 4 persons included me in my groups, who are Wansin, Doreen, me and new groupmate- Rachael.

The first step was to dewax the green apples. Follow by washing and peeling. Chop the apples into small pieces so that it is easier for cooking.

Then we heated the chopped apple to boiling, simmer until set,stirring frequently. Do not add water. Added in some cinnamon, nutmeg, citric acid and pectin till the brix reach minimum at 68°C. Remove from heat. Seal in hot sterilized glasses.
